Flourful Delight 知味面点 – Stellar Xiao Long Bao & Noodles at Golden Mile Food Center

Xiao Long Bao and Zha Jiang Mian. Name a better duo. I’ll wait. These two dishes are among the most loved dishes of Chinese cuisine, and are must-orders for me whenever I go to restaurants such as Crystal Jade or Din Tai Fung. Imagine my joy when I found Flourful Delight in Golden Mile Food Center selling Xiao Long Bao and noodles that can give these established restaurants a run for their money!

The first thing I noticed when I approached Flourful Delight 知味面点 is their workbench, which is covered in flour and balls of dough. I immediately realised that the father-and-son duo who runs Flourful Delight make their dumpling skin by hand. If that isn’t a sign of quality, I don’t know what is!

Upon ordering my Xiao Long Bao ($5.50 for 6 pieces), I was told to wait for about 10 minutes to let the dumplings steam. Once they were ready, make sure to let them cool slightly, or the hot soup contained within may burn your tongue. I speak from experience, because that’s exactly what happened to me when I took a bite of these dumplings. What can I say, they looked so good that I got impatient!

Subpar Xiao Long Baos often have a thick, chewy skin, which makes it hard to get to the delicious broth within. What makes Flourful Delight’s Xiao Long Bao stand out is how delicately thin the dumpling skin is, while still being strong enough to remain intact when you pick them up with your chopsticks. Pair these dumplings with some vinegar and ginger slices to cut through the richness of the pork broth!

Flourful delight also offers a wide range of delicious noodle dishes. I ordered two classics, Zha Jiang Mian ($4.50) and Dan Dan Mian ($4). The Zha Jiang Mian consists of minced meat and a fermented soybean sauce, while Dan Dan Mian features a peanut sauce with chilli oil and vinegar.

What impressed me the most was the quality of the noodles, which were springy and chewy. With the relatively simple sauces, the quality and doneness of the noodles can be noticed immediately. The noodles here were perfectly cooked!

While simple, these noodle dishes were quite substantial, filling me up rather quickly. Because of this, I preferred the Dan Dan Mian, which had a dash of vinegar to cut through the dish and make it more appetising.

I am sure that it is only a matter of time before this relatively new hawker stall, with its high-quality dishes, attracts a loyal fanbase. I, for one, am now a fan, and I will definitely be back for more!

Hock Lee Fishball Noodles – Simple But Delicious Handmade Fishball Noodles!

T’was a fine morning, and I was walking around Bugis looking for something to eat for breakfast. Then I remembered, Hock Lee Fishball Noodles is just around the area! It was pretty early in the morning, which means they probably haven’t sold out yet.

And thankfully, they hadn’t! I grabbed a few bowls to share with my colleagues. The first bowl came with mee kia (dry version), and a small bowl of fishball soup. I love how the flavourful chilli coated every strand of the thin noodles, and made them so flavourful. The chilli gave a very welcomed kick, and totally woke me up. The lard made the bowl of noodles fragrant, but it filled me up quickly as it was rather greasy.

The fishballs here are handmade! Say what?? They’re so soft, but still has that bite when you chow down on them, which makes them really QQ. The fishiness wasn’t present either, which attested to their freshness.

They mee pok was cooked to perfection — in between al dente and soft.

If you’re not up for dry noodles, go for the soup version! We got the kway teow mee soup as well. The fishballs were great, of course, but the soup was a little too bland for my liking. For me, the dry version definitely triumped over the soup version. However, if you prefer milder flavours, this would be great for you.

Each bowl of noodles was $4(for both dry and soup versions). If I’m ever craving for fishball noodles, I’ll come here.

It’s Chinese New Year again! Which means it’s time to ready your chopsticks to Lo some Hei!

Vibrant and colourful, this online-exclusive, take-away YuSheng is great for vegetarians and those who are more health conscious.

The jackfruit stands out in particular as it is the strongest tasting fruit among the six. If you’re a fan of jackfruit, you’re really going to love this version of YuSheng. I sure know I do.

Alternatively, you can opt for the all-time favourite — Salmon Sashimi YuSheng! Ichiban Boshi and Ichiban Sushi use only the freshest Norwegian salmon, and arrange the slices into beautiful sashimi roses. The Salmon Sashimi YuSheng is available in two sizes for take-away and dine-in: Auspicious YuSheng for 8-10 pax (24 pieces of salmon sashimi, $60.90) and Bountiful YuSheng for 4-6 pax (18 pieces of salmon sashimi, $49.80). Each YuSheng comes with a house-made yuzu sauce, which is made with ingredients from Japan! The sauce is uniquely sweet and sour, completed with a yuzu fragrance. When coated in the sauce, the ingredients are armed with citrus notes. Personally, I think it beats the usual plum sauce.

You know the feeling when you have to place all the ingredients in the Lo Hei, but you don’t know which phrase to say for each ingredient while doing so? Well, no sweat. Each YuSheng set comes with a small toss-to-prosperity instruction guide, which you can refer to if you’re unsure of what to say. Or, if you’ve simply run out of auspicious sayings during the tossing itself, you can take a quick gander at the guide for some inspiration.

Choon Kee Roasted Delights – Roast Meats to Sink your Teeth Into!

Roasted meat stalls are a dime a dozen in hawker centres. However, searching for a truly outstanding one is like searching for a needle in a haystack. Imagine my joy when I discovered Choon Kee Roasted Delights in Golden Mile Food Center, which serves impeccable roasted meat dishes!

Originating from Ang Mo Kio Industrial Park 2, Choon Kee Roasted Delights serves up all the roast meat classics. This includes Roasted Pork, Char Siu, and Roasted Duck meat. Of course, I had to try everything.

First up, we had the Char Siu Roasted Pork Rice ($4). I was very impressed with the substantial amount of meat that was given, as some roasted meat stalls seem to give only half of the portion of either Roasted Pork or Char Siu when you order a combination of roast meats. Here at Choon Kee, it looked as though I got a double portion of meat!

The Roasted Pork had a shatteringly crisp skin, while the Char Siu was coated in a delicious char siu marinade. Both meats were tender and moist as well. Paired with white rice and fresh cucumbers, this dish did not take long to be wiped clean by me! I just wish that the store provided a sour, vinegary chilli to cut through the fattiness of the meat, especially the Char Siu.

Next up from Choon Kee is the Roasted Duck Drumstick Rice ($6). While the drumstick is more expensive, it is definitely worth it for its superior flavour and tenderness. Not to mention, you get much more meat than the standard duck rice! The dish also comes with a side of fresh cucumbers, which lent a cool, refreshing crunch to each bite.

What stood out to me most was the duck skin, which was actually crispy! Many roast meat stalls struggle to attain crispy duck skin, but Choon Kee has really mastered the art of roasting their duck.

Mellben Signature’s signature dish is undoubtedly the Claypot Crab Vermicelli Soup. Now you may be thinking to yourself: “How can a simple noodle soup dish be the most famous item in a restaurant?” However, beneath this dish’s humble appearance is a broth that packs a knockout punch of umami! Over 20 crab shells are used in the soup stock, giving it tons of sweetness. Milk is added to the broth, boosting the flavour and texture with a rich creaminess. An amazing broth, sweet crab meat, and thick springy beehoon, what’s not to love? Just one mouthful, and you’ll fall in love!

Another must try is the Creamy Butter Crab. The crab is coated in a thick and creamy butter sauce, which accentuates the crab’s natural sweetness. The sauce is made even better with the incorporation of chillies and fragrant curry leaves. I guarantee that you’ll love this sauce, so make sure to order some Fried Man Tou to mop it all up!

Looking for a not-so-common style of crab? Check out Mellben Signatures “Pi Feng Tang” Crab! Roughly translating to Typhoon Shelter crab, this dish is said to originate from families living on boats near the typhoon shelters in Hong Kong. The crab is fried with lots of chillies, garlic and scallions, making it immensely mouthwatering and extremely addictive. The mountain of fried garlic bits, which gave an extra layer of crunchiness, was so good! Ignoring the many pairs of eyes staring at me, I scooped up spoonfuls after spoonfuls of the fried garlic and popped them into my mouth!

The moment the Red Garoupa Steamed in Lemon Sauce entered the room, our mouths started to water. The aroma of lemon and garlic was beyond captivating. The fish was impeccably cooked, and the strong flavours of lemon and garlic made this dish absolutely irresistible!

Yong Xiang Xing Dou Fu – Famous Yong Tau Foo In People’s Park

10 minutes before the stall opened, a queue had already formed. I quickly rushed to join the throng of people.

They have just one item on their menu — Yong Tau Foo in one size ($4.50). This way, they follow a standard operating procedure when preparing each bowl and can serve the customers faster. It also makes taking orders easier, as there is only one item after all.

To be very honest, I didn’t know what to expect before trying this. It’s just a bowl of yong tau foo right? How good could it be? And then, the first spoonful blew my mind.

The soup was unbelievable savoury and sweet at the same time, but not overly so. It looked so clean, so unassuming, but, it was bursting with flavour.

I’m not the biggest fan of fishballs but I would just rate this one as average. Nothing fancy, nothing special, just a normal bouncy fishball.

The tofu, however, I definitely enjoyed. There are two different types of tofu in the bowl, a normal one with fish paste on top, and a fried one with fish paste as well. Both tofu were the silky smooth type, and the only difference between them is the outer crust on the fried version. If I was feeling healthier, I would prefer the normal tofu. But, the fried tofu definitely was tastier.

The chilli here is made with fermented beans, which gives the chilli a tangy kick which went really well with the fish paste that’s wrapped in beancurd skin. The tangy chilli spiced up every ingredient and made everything even more delicious!

From the queue alone, you can already tell that this is a yong tau foo worth queueing for. It really is a simple dish, but to make a simple dish shine is the tough part, and Yong Xiang Xing Dou Fu has nailed it.

Café Amazon is a famous Thai Coffeehouse chain that finally made its way to Singapore in 2019. I highly recommend their Chicken Lasagna ($8.90), which made me fall in love on the first bite. Each forkful was filled with tender chicken, sweet marinara, and an irresistible cheesiness that got me sighing in delight. It is best paired with a cup of Hot Thai Milk Tea ($4), which exuded a lovely smokiness in each sip.

Mr. Bready – You Can Have Your Huat Kueh And Eat It Too!

Jason (pictured left) and Rodney (pictured right) opened the business together around four years ago. However, when they first started, they were making bread. One day, when there was a surplus of sweet potatoes for their sweet potato bread, they decided to use them in steamed cakes instead. And thus, that’s how the steamed cake business blossomed. Now, they use sweet potatoes in all their steamed cakes, just in different ratios.

The process seemed simple enough, and was enjoyable to watch. Everything was straightforward and followed a SOP, so the time it took for Jason to complete the whole process was really quick.

There are six flavours that are the mainstay of the shop — Sweet Potato, Osmanthus, Matcha, Black Sesame, Gula Melaka, and Strawberry Milk. But, they actually have a grand total of around 30 different flavours of huat kueh that they rotate throughout the year! Most of them are novelty flavours that the owners themselves love to eat. I can only imagine how much R&D they must have done to get out as many flavours as they have.

huat kueh collageWe tried a few of the flavours they had available that day, Gula Melaka (top left, $1.30), Pulut Hitam (top right, $1.40), Osmanthus Sweet Potato (bottom left, $1.40), and Matcha (bottom right, $1.40). Contrary to popular belief, not all huat kueh are made for Chinese prayers. Some are actually made to be consumed, like the ones here at Mr Bready! These steamed cakes are softer and more moist compared to a lot of huat kueh out there.

They are also less sweet and healthier than most, as the sweetness of the cakes come from sweet potatoes.

I especially liked the pulut hitam and matcha flavours as I feel that they taste exactly like how they are advertised. I never expected the black glutinous rice taste to be so prominent, but I stood corrected. The matcha flavour was quite intense too, so I would assume they used a good amount of matcha powder in their cakes.

The osmanthus, I think, is a hit or miss kind of flavour. I didn’t find myself fancying it very much. But, my colleague loved it, as it had a very familiar taste, she said.

Other than steamed cakes, they also offer different types of bread. Their signature would be the Wintermelon Mochi Wholemeal Bun ($1.40). The bread itself was fluffy and light. I particularly liked the mochi in the bread, as it gives some of that wintermelon flavour as well as a subtle sweetness. The mochi stuffed in the bread was chewy and sticky. The varying levels of chewiness present in the bread made it fun to eat.

They also sell Chinese New Year pastries! They have so many unique and innovative flavours that will leave you pleasantly surprised (e.g. mala cookies). I shall not name the rest as there is simply far too many. Why don’t you come on down here and see for yourself? But first, you have to give the huat kueh a try!

Monan – Making Egg Sausages Great Again

The name Monan was inspired by the Vietnamese word for food (món ăn). Also, the Chinese characters 莫南 means south, and Singapore is one of the most Southern countries in Asia.

What makes Monan special is their egg sausage. In the hawker scene, you will very rarely find someone selling it. To put it into perspective, egg sausages are so incredibly obscure and uncommon that it took me forever just to find one article about it on google. At least in Singapore, you’re more likely to see these in Hakka households. Even then, it’s still not common as cleaning the pig’s intestines is rather laborious.

Chuk and Kim, the owners, first tried it in a Vietnamese village. Because it was so unique, they decided to bring it back to Singapore. They went through a lot of trial and error to finally get the formula and taste right.

I watched in fascination as Kim quickly whip up the egg batter, then slowly fill the super long casing. After she was done, she tied the ends shut.

After a few minutes in boiling water, the sausages are ready to be cut and served. The cooking process seemed simple enough, but the effort to prepare the ingredients beforehand is the killer. The couple cleans these casings out every morning.

I finally got to try it in the Monan Pork Soup ($3.80). The bowl comes with egg sausage, handmade meatballs, pork skin, pork belly, daikon, and spinach.

The egg sausage tasted and felt just like egg tofu, except with the skin of a sausage on the outside. It was really smooth and I enjoyed eating it.

I really liked the handmade meatballs. They were incredibly bouncy, not too salty, and had a great pork flavour.

The soup, on the other hand, felt a bit flavourless to me. Or at least, I expected a stronger and richer pork flavour.  It tasted clean, but it’s not really what you would expect from a pork broth, especially one that is loaded with different cuts of pork.

The Pork Leg Soup ($5) featured two cuts of pigs trotters. If you enjoy eating pigs trotters, you might like this. The meat was tender, so it was easy to eat. The pieces were huge so it’s worth the price.

Last but not least, we tried the Pig Organ Soup ($4.5). Pig organs, in general, are not my cup of tea. They’re an acquired taste, and my palate does not fancy them. The organs here are your pretty standard fare of liver, intestines, and stomach. Again, if you like organs, you might like this.

Each bowl is quite filling, but if you’re feeling hungry, you can add on noodles or rice ($0.50).

Victor Veggie – Vegetarian Satay That Could be Mistaken for Real Meat!

I’ll say it straight, mock meat is not my cup of tea. If I ever ordered vegetarian food, I would never get it. So, when I heard about Victor Veggie, I was very iffy about it. “How good can mock meat taste?” Well, I was about to find out.

Victor, who is a vegetarian, has been making vegetarian satay for 40 years now. I asked him where he learnt how to make his food, to which he replied, “I came up with them myself.” Colour me impressed.

Other than satay, he makes vegetarian otah too. He does have some other dishes but I went too early and they were not ready yet. So I got 10 sticks of satay ($0.80 each | min. 10 sticks), and two otah ($0.80 each).

Can you tell that the satay at Victor Veggie is not made out of meat? Because, at first glance, and many glances after, I couldn’t.

The “meat” was charred to the point that it had crispy edges, crunch and all. I have a feeling it’s because it’s made out of soy protein, and that crisps up better and easier than real meat does. The texture is closest to chicken, I would say. The “meat” itself had that distinct smoky satay sweetness. It was overshadowed by the even sweeter nutty peanut sauce but, I’m not complaining. The combination of the two was like a match made in heaven. I never liked mock meat. But this? I dig it. If you thought hard about it, you can feel that the texture is somehow not right, but really, it could have anyone fooled. Would definitely eat it again.

The otah didn’t impress me as much, unfortunately. It was too soft, maybe even slightly mushy, for my liking. The seasoning and spices were spot on, but the texture of the soy protein here ruined it for me. You should still try it out, but I would recommend the satay more.

Victor Veggie is definitely a cut above the rest in terms of making mock meat taste real. Still don’t believe me? Then come on down and try it for yourself!

While Fei Zai Xiang Shao La Wanton Mee is not one of the more famous stalls in Redhill Food Centre, regulars there will know that they serve up a mean char siew. They also sell various other roast meats.

During my first trip there, I arrived just as the stall opened, but they were not ready yet. So, I waited another 1.5 hours before returning. And yet, they were still not ready. I gave up waiting that day and returned again a few days later. The second time, I learnt my lesson and went in the late afternoon instead. I’m not sure if their inconsistent opening times happen every day, or I was just really unlucky the first time round.

We tried their Wanton Noodles ($3.50), which came with the standard wanton noodles, wantons, and char siew.

The noodles were decently springy, with an eggy taste. The sweet sauce was thick and slightly savoury. it’s a good thing I asked for a little more or the noodles would have been quite dry.

The char siew was quite fatty, as you can see. The edges were nicely caramelised. Some ends were even slightly charred for that lovely smokey fragrance. They weren’t exactly juicy or the most tender, but they are definitely above average.

The plump wontons were packed with meat, and I kind of wish there were more on the plate as they were quite delightful.

Next, we tried the Roasted Meat Rice ($3.50). The plate came with rice and roasted meat, and was covered in the same sauce as the wanton noodles. The roast meat had that lovely crackly skin, and was tender and fatty. It wouldn’t be the number one thing I would order here, but it’s still an okay meal.

Fei Zai Xiang Shao La Wanton Mee might not be well known, but they do their meats well. You have to get the char siew!

Bak Kee Teochew Satay Bee Hoon sells you guessed it, satay bee hoon. Satay Bee Hoon is a dish that is rarely seen in the hawker scene these days. The number of stalls in the country is dwindling, as making this dish is surprisingly tedious.

Bak Kee Teochew Satay Bee Hoon is one of the remaining stalls, and one of the most popular ones. There’s always a queue, regardless of what time it is. As they make everything fresh, be prepared to wait for a bit before getting your order.

I got a plate of Satay Bee Hoon ($4), and my first thought was that everything looked indistinguishable. The satay sauce simply covered everything.

Be sure to give your noodles a good toss to get every strand evenly coated in the peanut sauce. The peanut smell was quite strong, even from a distance. The sauce was rich, sweet and nutty. They had crushed the peanuts into coarse chunks, so the sauce has a nice texture and a little crunch. While the sauce looks red, it is not spicy at all. The bee hoon soaked up the sauce pretty quick, so it got a little dry after a while.

The plate came with a number of ingredients. The boiled cuttlefish was a little hard and chewy. But hey, I’m not complaining. I prefer my cuttlefish this way. The satay sauce helped to give flavour to the otherwise bland seafood. Other than sambal, I think this peanut sauce might be my favourite sauce to eat with cuttlefish.

The sliced pork was on the tougher side, and had the subtlest porky flavour.

I am not a fan of liver, so I got my colleague to describe it for me. He said it was cooked perfectly — creamy and still retaining that distinct liver flavour.

The leafy part of the kang kong was tender, but the stem was still crunchy, just how I like it. Although, unlike the cuttlefish, I’m not too sure about having kang kong with a sweet peanut sauce.

Overall, Bak Kee Teochew Satay Bee Hoon lives up to its reputation of being one of the best satay bee hoon stalls in Singapore. Being one of the oldest as well, their recipe has stood the test of time and their bee hoon remains as delicious as it has always been.

Woody Family Cafe may be located in the far north of Singapore, but the superb Peranakan cuisine here makes the journey more than worth it! This outlet of Sum Kee Food is actually the second outlet for this famous Zi Char restaurant, with its original outlet in Telok Blangah constantly attracting a large crowd! The signature item at Sum Kee is undoubtedly its Curry Fish Head, which comes with a big and meaty Red Snapper head. What makes this Curry Fish Head so good is that the rempah, or spice paste, is ground in-house. This really amplifies the flavour and fragrance of the sauce. A bowl of fluffy white rice is a must when having this delicious dish!

Fuze by Blaze It Up is a casual Italian eatery, with some stellar dishes that are sure to impress! In my opinion, the best thing on the menu is the Roasted Pork Belly. The meat had a great meat-to-fat ratio and was perfectly seasoned. The crackle of the crispy pork skin was music to my ears as I chomped down on the pork belly! While this dish requires a 15-minute wait, it’s more than worth it!

Hup Chong Hakka Yong Dou Foo was started by Alan’s mother 38 years ago. At the age of 10, Alan started helping his mother out at the stall, when it was still signboard-less, at a coffeeshop near Braddell MRT (where McDonald’s currently is).

After more than a decade, it shifted to Blk 116 Toa Payoh Lorong 1 when McDonald’s took over the space. The second outlet is this place that is located at Blk 124 Toa Payoh Lorong 1. This outlet is already 9 years old. Unfortunately, the one at Blk 116 ceased operation after more than 10 years due to a lack of manpower.

Thus, Alan has been focusing on this Blk 124 stall ever since. He opened two other stalls within the same coffeeshop — a Zichar stall 7 years ago and a Japanese stall recently. You can say he owns the entire coffeeshop.

Hakka-style yong dou foo actually showcases meat paste stuffed, instead of fish paste stuffed, beancurd and vegetables. Alan revealed that taste preferences have changed over the years, and health has also become a consideration. People fear eating too much meat, so, to cater to the change, Alan decided to include some fish paste options too.

What made Hup Chong Hakka Yong Dou Foo stand out from the typical yong dou foo stalls is the fact that all of its Hakka ingredients are handmade with meat or fish paste. Alan’s workers split the preparation into 2 batches. Arriving as early as 5am, the workers will start making the ingredients in a small room beside the stall to prepare for operation by 6:30am. Between 3:30pm-4:30pm, the stall will take a break from business, but the workers will continue to prepare the 2nd batch for the evening round which starts at 4:30pm, all the way till 8:30pm or sold out. Alan believes that this will keep the ingredients fresh for both the day crowd and evening crowd.

Slowly but surely, tubs of handmade items are sent for deep-frying. It was quite an amazing sight to see the original pale pieces turn a glorious golden brown.

TADA! The first batch is ready for serving! When I asked one of the workers how many of these ingredients will be left over, he smirked and said that all will be sold out by the end of the day. Wow.

The stall only offers kway tiao, yellow noodle and thin beehoon(dry or soup version). Select at least 6 items and you’re good to go. Since Hakka yong dou foo is more known for its dry version, make sure you request for both chilli and sweet sauces. The stall makes its own chilli and sweet sauces too! I guess that’s the local style here in Singapore too — a little sweet and a little spicy.

To be honest, I thought that when I chose the fried items, they will be fried again like how some other yong tau foo stalls do. It’s not the case here. While I hoped my deep-fried selections will be served to me crispy, they had just a little crisp to them. Even so, the ngoh hiang, beancurd skin and meat ball were delightfully savoury and fragrant! Those stuffed with meat paste were not floury at all! The house-made chilli sauce and sweet sauces went well together and provided a sweet contrast to the savoury items too.

Did I mention that they also serve pig’s intestines?! This is actually my first time coming across this in Singapore at a yong dou foo stall, though it is quite common in Malaysia.

Only adding yellow beans, Hup Chong’s soup version is purposefully light. Alan explained that since Hup Chong is about meat paste items, he doesn’t want his customers to feel too jelak from eating his yong dou foo. Thus, he intentionally keeps his soup simple and light, so that customers can take a bite of a meat paste item and sip a mouthful of soup to cleanse their palates before moving on to the next savoury bite.

Confident of his soup, Alan claimed that one does not need to buy any drink to go with his yong dou foo because he/she will not feel thirsty after consuming it. I actually think the soup is quite flavourful on its own! Surprisingly addictive!

Oh yes, Hup Chong has pork skin too. Its texture is similar to that of fish maw, but it has a more fragrant aftertaste. The small intestines had a bitter finish that only some people can accept. It looked really clean, so I guess it’s the natural taste of the intestines!

Boy, I left this for the last on purpose. THE. EGGPLANT. IS. THE. BOMB. I already love eggplants in the first place. But this was another level. When I see the worker stuffing the fish paste into it, I didn’t think much. Gosh, when I had my first bite, I said to my friend who doesn’t appreciate Yong Dou Foo “YOU MUST TRY THIS”.

Alan shared that Hup means “come and eat together” and Chong means “it’s for everyone to eat”. While most yong dou foo stalls purchase their ingredients from suppliers, Hup Chong painstakingly handmade all of their meat/fish paste ingredients! Commendable!

Many of you would know Chye Lye Ah Ma Mee Sua at Kampong Admiralty Hawker Centre for its long queue. They have recently opened their third outlet at Toa Payoh. The dishes served are what owner Mr Ong Chye Lye had when he was young. Hence, he decided to give his dishes nostalgic names like “Ah Ma Mee Sua” and “Ah Gong Mee Sua”.

Chye Lye shared that each dish has its own loyal fans. Amongst the 3 dishes we ate, Ah Ma Mee Sua ($4) is the most popular, and my favourite too. “I named this Ah Ma Mee Sua because grannies at their age would seldom have teeth left, and our mee sua is soft enough for them to consume.”

The mee sua from Mabo was soft and soaked up the flavours of the soup. There’s tender pork liver, meat balls and stewed mushroom in the soup. Oh yes, and the handmade porkball had crunchy carrot bits! The texture of the minced meat felt quite chunky. Everything was firmly held together and complemented really well by the house-made tangy chilli sauce. Topped with freshly fried ginger shreds and Hua Diao Jiu before serving, the soup becomes a flavour bomb yet doesn’t overwhelm the palate.

Don’t mistake Ah Gong Tau Chiam ($4.50) for ban mian. The fried soy bean noodles is made from a mixture of bean powder (豆粉) and wheat seeds (麦粒). This flat noodles is slightly more grainy but still has its QQ consistency. There are sliced pork, stewed mushrooms and thin liver slices in the soup too. I like that the liver slices are not too powdery and the generous drizzle of Chinese wine adds more flavour and fragrance to the soup.

Some of us may not like Ma Ma Sheng Mian ($4) because of the alkaline taste in the yellow noodles. But for Maureen, this is a dish her grandmother used to cook when she was young. The noodles made the soup extremely thick and starchy, and tasted very much like lor mee (with a strong alkaline aftertaste). While this wasn’t my favourite, it does bring back memories for some of my peers.

Specialising in authentic premium beef hotpot from Northeast China, Guo Fu Hotpot Steamboat claimed to be the first to introduce the small and individual hotpot concept in Singapore 15 years ago. Even though it gives diners an option to share a big hot pot of 2 soup bases, Guo Fu believes that individual hotpot promotes better hygiene.

With 10 different types of soup bases, 64 fresh and quality food options, free-of-charge house-made condiments and unlimited Xiao Long Bao (XLB; soup dumplings), Guo Fu Hotpot Steamboat is a place where you can eat for hours with good companions.

While it costs $25.90++ for weekday lunch buffet and $27.90++ for dinner buffet, the soup bases come at an additional cost, ranging from $3 to $7 if you opt for the individual pot. For the big sharing pot, it ranges between $9 and $23, depending on the combination of soup bases chosen.

Although Guo Fu doesn’t have an extensive spread of condiments, it has special sauces for different hot pot items. Take the seafood sauce, for example. It is made in-house specially for beef slices. They even have a chive-based paste and mushroom sauce that is made with 5 types of mushrooms including Black Reishi and King Oyster. It’s savoury and suitable for most ingredients.

When I first saw the soup base menu, I had a hard time deciding what to get because all of them sounded so good! The menu also states some health benefits for some of their soups, so it made me feel less guilty indulging in this buffet. In the end, we chose Mild Spicy Soup ($3) and Beauty Soup ($7). The Beauty Soup is boiled with black chicken, red dates, wolf-berries, Cordyceps and other herbs. Thus, it is rich in antioxidants and collagen.

Let’s not beat about the bush and plunge into the must-tries of this buffet. Since Guo Fu specialises in premium beef, the one thing you must order is the Sliced Special Beef which I call the “fatty beef”. With almost an equal ratio of fats and meat, every thin slice gets cooked within 5 seconds. Expect very soft and tender beef that is already full of flavour on its own!

Guo Fu also has an impressive selection of other raw meats. You can choose from different cuts of beef, chicken, mutton and pork. Interestingly, it also offers unusual options such as duck gizzards and hog skin. Go for the pork belly — it absorbs whatever broth you cook it in.

Next up, Guo Fu is known for its unlimited XLB! All the XLB are steamed upon order, so you don’t have to worry that they aren’t hot when they arrive. You may request specifically the number of XLB you want. In this way, you won’t need to experience any paiseh (awkward) last-piece or feel the need to waste your stomach space just to accommodate an additional XLB.

Personally, I find the skin is on the thicker side, but I absolutely love the juicy meat in a savoury soup encased within.

They have 10 seafood items, but I will recommend the crunchy prawns, sweet scallops, and fresh mussels! All these will make your broth even sweeter and more palatable.

For desserts, other than pumpkin puree, pumpkin cake, fresh fruits and fruit banana fritters (only available for dinner), there’s free-flow ice cream too! With sweet and savoury dessert options, there is something for everyone.

To be honest, I feel that its fatty beef alone is worth another visit. I’ll probably try Guo Fu’s unique Curry Beef Soup and Male Vitality Soup the next time!

Hollywood Duck Rice – Old-School Braised Duck Rice

Nestled within Tanjong Katong, about a decade ago, was Hin Hollywood Canteen. There used to be this humble stall selling Braised Duck Rice — Lian Kee Duck Rice. Hin Hollywood Canteen was demolished in 2011 and Lian Kee Duck Rice moved. I have since been trying to find the stall, which was my go-to duck rice stall as it was located near my school. A quick consult with my friend Google led me to Sims Place Market and Food Centre. Lian Kee Duck Rice has changed their stall name to Hollywood Duck Rice, probably just to retain a little of their origin. I was really elated and excited to find the stall again!

The main star was none other than the Braised Duck Drumstick Rice ($5). At Hollywood Duck Rice, any cut of meat will be good as long as it is accompanied with their mouth-watering gravy. I was so glad I paid a little more for the drumstick as it was super juicy and tender! The thick and gooey gravy was packed with flavour. It was slightly on the saltier side, with a hint of sweetness and subtle herbal notes. Sometimes I am a little apprehensive when it comes to duck due as it tends to have this smell if it is not handled properly. However, the one here was done pretty well. It tasted just like how I remembered it to be in my childhood years.

I really love the dark brown rice that comes along with it. They cook their rice in their own braising sauce. The rice was soft and fluffy and had this lovely fragrance. I am contented just eating it on its own! Adding the homemade chilli and gravy just completed the experience. They have a few types of chilli, but I preferred the one that had lime seeds in it (similar to that found at a chicken rice stall). The soup had a very light herbal taste and was a nice accompaniment to the rice.

Being a little adventurous, I decided to give the Kway Chap ($4.30) a try too. I have never tried their kway chap back when I was a child. The kway chap comes with Pig Skin, Tau Kua, Tau Pok, Chitterlings (Small Intestines) and pork. To be honest, I was not as impressed with the Kway Chap as I was with their duck rice. I felt that the Kway Chap was a little dry and not as flavourful. The pork was a little tough and the chitterlings were bitter. I quite liked the texture of the pig skin though! It was chewy and went well with the gravy.

I’m glad to have found my childhood haunt. It brought back great memories of my school days! And needless to say, I will be back.

Lao Lee Pig’s Viscera Pork Ribs Prawn Noodle – Best Comfort Food

Imagine having a bowl of hot flavoursome pork ribs prawn noodle soup on a cold rainy day. Doesn’t that sound comforting already? Situated in the heartlands of Tampines is an unassuming stall selling Pork Ribs Prawn Noodles and Pig’s Viscera Noodle. It is hard to miss the stall as there’s almost always an endless queue through the day.

Mdm He started this stall about a decade ago. A kind friend gifted her a recipe back then, and she made many improvisations along the years. A lot of hard work goes into the preparation of the soup stock which is the soul of the dish. Mdm He starts her preparations as early as 4am everyday! In fact, the preparation starts from the day before. Right from the moment she closes her shop for the day at about 2pm, she will start to cook the soup. The soup stock is made of pork bones, prawn head, garlic, pepper and some ‘secret ingredients’. The soup is cooked over high heat for about two hours before it is left to simmer overnight. Can you just try to imagine how flavourful and rich the soup is? Mdm He then reboils the soup when she reaches the stall at 4am, before it is ready to be served by 6am. I guess the ‘secret ingredients’ are the key to making the soup so delectable that you will always want to go back for more, because you will never be able to replicate it at home!

I decided to go for the Pork Ribs Prawn Noodle ($4) first. The soup was definitely as comforting as I had imagined it to be. It was not too heavy and had a slight tinge of sweetness. They have 4 choices for the noodles: Yellow Noodle, Bee Hoon, Kway Teow and Thick Bee Hoon. I requested for a mix of yellow noodle and beehoon which is usually my go-to choice. The prawns were really sweet and succulent. The pork ribs were so tender that I could pull the meat off the bone in just a bite. If you are a fan of spicy food, I recommend that you add some the chili powder available at the stall.

Next up, we tried the Pig Viscera Noodle ($4) with yellow noodles. The soup stock is the same for all the soup dishes, but the ingredients are different. I am not a big fan of the eggy taste of yellow noodles and I felt that that distinct taste was quite prominent in the soup. There’s Pork Skin, Pork Intestines, Pork Liver, Pork Ribs, Pork meat and one prawn in this dish. The meat was lean and soft, and the liver tasted fresh but it was a little bloody when served. Should you not like any ingredients, you can inform Mdm He and she will exclude that from your bowl.

Lastly, we tried the Pig’s Stomach Noodle ($4). Fans of pig’s stomach will know that it needs to be cleaned thoroughly or it will be off-putting. It also has to be slow cooked in order for it to be tender. I must say I liked the texture of it as it was not too rubbery and was easy to chew through. However, amongst the three bowls we had, this was the least flavourful.

I liked the Pork Ribs Prawn Noodle the most! The next time you are feeling a little under the weather, this bowl of goodness might just perk you up.
